Bruschetta is one of the tastiest and quickest appetizers to throw together. A lot of times, I already have the ingredients lying around the house. Okay, maybe not that casually, but you get my drift.

I’m sure you’ve seen a variation of bruschetta served at different restaurants. Some use shaved Parmesan for the cheese. Some add minced garlic. I’ve also had one that was whipped like a mousse with chopped onion and decorated on top of the toast like a frosted cupcake.

I’m not going to get that fancy with this recipe. A lot of us need quick and simple. So let’s get to it, shall we?

Tomatoes

Dice those Roma tomatoes!

Mozzarella

Next, cube your mozzarella cheese.

Brushetta Mixture

Add the ingredients to a medium-sized bowl. Add in the olive oil, basil, and salt. Gently stir to coat the tomatoes and mozzarella.

From here, cut your Italian loaf into 1″ slices. There are two simple options for toasting your bread:
You can drizzle olive oil on both sides of your sliced bread, rub with garlic clove, and place them in a pan on the stove over medium-high heat to brown them.
OR
The other super easy and simple way is placing your sliced bread in the toaster, but you won’t have the great garlicky taste on your toast.

Bruschetta

Finally, top your crusty bread with your tomato, mozzarella, and basil mixture.

Ingredients

  • 8 Slices Day Old Italian Bread

  • 4 Roma Tomatoes, Diced

  • 8 oz Mozzarella, Diced

  • 4 tbsp Olive Oil

  • 1 1/2 tsp Fresh Basil

  • 2 Garlic Cloves

  • Salt & Pepper to Taste

Directions

  • Combine diced tomatoes and mozzarella in mixing bowl. Season with salt and pepper to taste. Add basil and olive oil. Gently toss to coat tomatoes and mozzarella.
  • Drizzle olive oil on both sides of bread slices. Rub each slice of bread with garlic clove. Place bread slices in hot pan on medium-high heat. Cook until golden brown.
  • Top each bread slice with bruschetta mixture.

Notes

  • If you are in a pinch for time you can toast your bread slices in the toaster without adding the olive oil.
