Instant Pot Pork Chops with Spinach & Mushroom Gravy

How to perfectly cook pork chops in your Instant Pot that you can serve plain or make a tasty mushroom and spinach gravy to smother them.

This recipe for Instant Pot pork chops makes your pork chops tender and juicy. Tender enough to cut with a fork or even pick up and bite off as my son did.

It does not cook them long enough to become pulled pork which is the perfect amount of tenderness I was looking for.

What you need to make JUST the pork chops:

  • Instant Pot or Pressure Cooker
  • Boneless Pork Chops, Pork Loin, or Butterflied Chops about 1″ – 1 1/4″ thick
  • Chicken Broth


The gravy is absolutely optional as it is cooked separately from the pork chops.

What you need for the gravy:

  • Reserved Chicken Broth from the Instant Pot
  • Flour
  • Butter
  • Half & Half
  • Baby Bella Mushrooms
  • Baby Spinach
  • Thyme
  • Salt & Pepper

How to perfectly cook pork chops in your Instant Pot that you can serve plain or make a tasty mushroom and spinach gravy to smother them.

Ingredients

  • 4 Boneless Pork Chops, Pork Loin, or Butterflied Chops about 1″ – 1 1/4″ thick

  • 2 14.5 oz cans of Chicken Broth

  • Salt & Pepper

  • Nonstick Cooking Spray

  • Gravy
  • 5 oz Baby Spinach

  • 12 oz Baby Bella Mushrooms, sliced

  • 2 cups Half & Half

  • 1 cup Reserved Chicken Broth from Instant Pot

  • 3 tbsp Butter

  • 1/4 cup Flour

  • 1 tsp Thyme

  • 1 tsp Salt

  • 1/2 tsp Black Pepper

Directions

  • Spray bottom of Instant Pot with cooking spray. Season pork chops with salt and pepper. Use saute setting on Instant Pot to brown pork chops on both sides, about 2-3 minutes each side until they reach a golden brown.
  • Place pork chops in Instant Pot, pour chicken broth over top. Seal the lid, and close the vent. Set to meat/stew option and adjust heat to high. Set the timer for 7 minutes. Reserve the chicken broth when it is done cooking to make the gravy.
  • Melt butter in a pan over medium-high heat. Cook mushrooms for 5-7 minutes until softened. Add flour and stir with mushrooms, blend half & half into the mixture. Add chicken broth, thyme, salt, and pepper, and bring to a simmer. Add spinach and stir for a minute. Pour gravy over top of pork chops. Serve with a side of mashed potatoes or even eat the pork chops by themselves – they’re that good!
